Rubio’s Fresh Mexican Grill® Introduces New Salad Offerings to Menu
New salads and wrapsaladas® now available in all Rubio’s locations
Rubio’s Fresh Mexican Grill today announced that the fast-casual restaurant chain has introduced new salad offerings to enhance their existing product line in all of their restaurant locations. In a continued effort to bring guests healthier menu choices, patrons will have the option of two new salads, the Balsamic and Roasted Veggie Salad with Chicken and the new Surfside Citrus Salad with Blackened Mahi Mahi.New salads and wrapsaladas® now available in all Rubio’s locations
“As summer approaches, our guests want lighter meals that are heavy on flavor,” said Ralph Rubio, co-founder and chairman of Rubio’s Fresh Mexican Grill. “Our culinary team has worked hard to develop these great tasting salads that fulfill our guests expectations, and like all of our other salads, are under 520 calories. I am pleased to introduce these two new salads to our current menu lineup.”
The new Balsamic and Roasted Veggie Salad with Chicken is comprised of crisp romaine and spring mix lettuce with red and green cabbage topped with fire-roasted corn, rajas-style grilled peppers and onions, fresh Hass avocado slices, sprinkled cotija cheese and grilled chicken, drizzled with a light balsamic vinaigrette made with extra virgin olive oil.
The new Surfside Citrus Salad features Rubio’s Blackened Mahi Mahi on a bed of fresh romaine and spring mix lettuce with red and green cabbage topped with Hass avocado slices, fire-roasted corn, black beans, salsa fresca, sprinkled cotija cheese and a sweet honey citrus dressing.
